Since my first distillation run over 20 years ago, I have often wondered what an authentic Australian whisky could be. In Australia, we can create with openness and transparency, and experiment without limitations.
My focus at Ostra is on creating timeless whiskies for all
to enjoy. I believe that Australian whisky has limitless
potential and no bounds. I strive to break glass ceilings in the world of whisky and deliver exceptional products that will stand the test of time. For whisky is made to warm the heart and warm your company of friends.

Inspired by his grandfather’s love of distillation, Dawid Ostrowski pursued his passion by studying Brewing and Distilling at Heriot-Watt University in Edinburgh. In 2005, he established his distillery in Melbourne and later acquired the McWilliams Wines Robinvale site in September 2007. With a Masters in Entrepreneurship and Innovation, Dawid brings an innovative mindset to the whisky world. His contagious passion for whisky drives him to create timeless whiskies for all to enjoy. Dawid aims to shatter traditional barriers in the whisky industry and deliver exceptional, enduring products that will stand the test of time.

our distillery
Located in the scenic Mallee region of Robinvale, along the Great Murray River, the Ostra Distillery is a proud inheritor of a longstanding tradition of winemaking and sherry production established by the McWilliams family.
Our distillery continues this legacy by producing our own Apera, the Australian version of sherry. With our state-of-the-art malt and grain distillery, we have been able to contract-produce and support the Australian distillation industry. As we move forward into the next chapter of our innovative malt distillation, we are proud to have recently acquired a 500-hectolitre brew house.
